Here’s some crafty ways to make a three-course meal in a mug. These might be good for the kiddos or hey, maybe even for a get together too.
They list seven breakfast ideas, three lunch/dinner ideas and don’t forget the eight desserts.
Ok, here is the list of microwave meals-
BREAKFAST:
1 1/2 tbsp milk
Salt
Ground black pepper
1/4 of a bagel (or similar ant of French bread)
2 tsp cream cheese
1/2 slice prosciutto or ham or turkey
Fresh themes leaves or fresh chopped chives
Beat eggs and milk together with a fork in a coffee cup, adding salt and pepper to taste. Tear bread into dime-size pieces; stir in. Add cream cheese; stir in. Tear or cut prosecution, ham or turkey into small pieces; add to mixture. Sprinkle with thyme or chives
– Microwave on high until done, about 1 minute 10 seconds.
1 oz frozen blueberries
1/4 cup ground flaxseed
1/2 tsp baking powder
2 Tbsp sugar-free pancake syrup
1/2 tsp orange zest
1 egg white
1/2 tsp nutmeg

Mix dry ingredients together thoroughly (I use a large measuring cup and just add other ingredients to the flax once I have measured it) and then add egg, syrup & zest. Pour into oversized coffee cup that you have sprayed (I use organic coconut oil spray) and put in microwave for 90 seconds. This will make a tall muffin. If you prefer a flatter muffin (more like a muffin top) use a small, shallow cereal bowl. Top with a little more sugar free pancake syrup if desired, and butter if you can spare the calories. For a really decadent version put a tablespoon of melted butter into the batter before cooking.

LUNCH/DINNER:
1/2 cup elbow macaroni noodles
1/2 cup milk or water (you can add heavy cream to make it creamier)
1/2 cup finely shredded cheddar cheese
Add milk/water and noodles into an oversized mug (20 oz mug). Place mug on a large plate so it can catch overflow of the milk/water. Microwave 1 min, sir, make sure the noodles do not stick to the bottom.
Microwave for an additional 1 min and stir again. Noodles should be almost cooled at this point and most of the liquid should be gone. Depending on your microwave, you might have to cook yours for an additional 30 secs.
After microwaving your noodles, immediately add in your shredded cheese and stir until it’s all melted.
2 Tbsp milk
1 Tbsp ketchup
2 Tbsp quick-cooking oats
1 tsp onion soup mix
1/4 pound lean ground beef
*add’t ketchup optional
In small bowl, combine the milk, ketchup, oats and soup mix. Crumble beef over mixture and mix well. Pat into a microwave-safe mug coated with cooking spray.
cover and microwave for 3 minute or until meat is no longer pink and is at a 160 degree.
Drain
Let stand for 3 minutes.
10. Coffee cup Chilaquiles
DESSERTS:
2 Tbsp butter
2 Tbsp peanut butter
1/2 tsp vanilla
1 egg
2 Tbsp sugar
2 Tbsp flour
3 Tbsp cocoa powder
1/8 tsp salt
1/2 tsp baking powder
3 Tbsp chocolate chips

Melt the butter in a small dish. Add the peanut butter and mix well.

In the mug, mix together the vanilla, egg, and sugar until well combined. Combine the flour, cocoa, salt, and baking powder and add to the mug. Pour in the peanut butter/butter mixture and mix well. Stir in the chocolate chips. Put in the microwave for 1-2 minutes or until desired doneness is reached (all microwaves are different so you might have to experiment a little. I only do it for about 1 minute). Top with peanut butter pie mousse and hot fudge.

Peanut Butter Pie Mousse
1 Tbsp softened cream cheese
1 Tbsp peanut butter
1/2 tsp vanilla
2 Tbsp whipped cream or cool whip
1 Tbsp powdered sugar

Mix together the cream cheese, peanut butter, and vanilla. Fold in the whipped cream. Sift in the powdered sugar (I just used a fork) and fold that in too, trying not to over stir.

4 tablespoons self-rising flour
4 tablespoons sugar
1 egg
3 tablespoons cocoa powder
3 tablespoons Nutella
3 tablespoons milk
3 tablespoons vegetable oil
WHIPPED CREAM TOPPING (IF DESIRED)
½ cup heavy cream
1 tablespoon sugar
Combine Ingredients in a large coffee mug. Whisk well with a fork until smooth. Microwave on hight for 1 1/2-3 mins (times varies on microwaves) Add heavy cream to the bowl of a stand mixer fitted with a whisk and whip on med-high speed until almost stiff. Add sugar and beat until heavy cream forms stiff peaks. Top mugs cakes with whipped cream and a little chocolate sauce, if desired
